GMP Good Manufacturing Practices requirements
Developed by the Codex Alimentarius, i.e. a list of rules and regulations developed first by a commission established by the FAO in 1963 and then by the World Health Organization (WHO), GMP good manufacturing standards include operating conditions that must necessarily be satisfied by the company entity, elenchiamone alcune:
- presence of a system that can guarantee the highest quality standards by supervising all activities connected with the manufacturing and control of the finished product;
- the construction and layout of food facilities;
- the use of suitable chemical supports inside and near food processing machines, including chemical products for hygiene, disinfestation and lubrication;
- waste identification and storage;
- the correct maintenance of all equipment and machinery, including tools, used within the laboratory or factory;
- the continuous training of staff, who must be equipped with all the specific skills to carry out regular tasks;
- the complete and correct management of traceability systems; including the documentary recording of the entire activity carried out as well as all the supports and reagents used;
- the adequate maintenance and storage of materials, definition of the manufacturing process, management methods of the medicine or supplement during the entire production process, from the raw material to the packaging of the product created.
- the cleaning of the entire structure intended for food, from the machinery, through the utensils and up to the flooring, walls and ceilings.
We conclude with the linear management of products that do not comply with the aforementioned specifications, with particular reference to the rules on sterile production, which are fundamental for minimizing the risk of microbial and particulate contamination through the use of “sterile” compartments or through the possible use of systems of sterilization.
